  • Note: If you aren’t using hazelnuts with the skins already removed, you’ll need to remove them yourself after roasting the nuts. While it’s okay if a few skins remain, you’ll want most of them off for the best texture. Preheat your oven to 350°F (175°C). Spread the hazelnuts in a single layer on a baking sheet and roast them in the oven for about 10 minutes, until fragrant. This also helps loosen the skins.
  • Immediately transfer the still-warm hazelnuts to a Vitamix or a powerful food processor. Begin blending/processing them until you achieve a wonderfully creamy, buttery consistency. This is where patience is key; you’ll need to stop and scrape down the sides of the blender or food processor a few times to ensure everything processes evenly. Depending on your appliance’s strength, this step might take some time, but keep going – it will eventually transform!
  • Once the hazelnut butter is super smooth and creamy, add in the remaining ingredients for the Nutella: cacao powder, your chosen sweetener (coconut sugar or monk fruit), melted coconut oil, vanilla extract, and sea salt. Blend again until all ingredients are thoroughly combined and the mixture is perfectly smooth and velvety. Taste and adjust sweetness or saltiness as you like. Store any leftover homemade Nutella in an air-tight container at room temperature.

  • In a food processor, add 1/2 cup of your raw hazelnuts and blitz them until they reach an almost almond-flour-like texture. Otherwise, you should be able to work with it straight away. Take small portions of the dough and roll them into balls between your palms. As you roll, gently press a whole raw hazelnut into the center of each ball, rolling the dough around it to fully encapsulate the hazelnut. This creates the classic surprise center!
  • For an authentic Ferrero Rocher experience with extra crunch, you can optionally roll the formed balls into a shallow bowl of finely chopped hazelnuts. Place the baking sheet back into the freezer for another 20-30 minutes, or until the chocolate coating is completely firm and set. Once firm, transfer your homemade Ferrero Rocher to an air-tight container and store them in the fridge.
  • Note: For long-term storage, these truffles store beautifully in the freezer for up to a month! I actually enjoy mine straight from the freezer for a super firm and chewy texture. However, they will be quite a bit firmer than when stored in the fridge.
