Ingredients

  

Date Caramel

  • 1 cup medjool dates, pitted *soaked in hot water for 15 minutes
  • 1 tbsp melted coconut oil or avocado oil
  • 2 tbsp nut butter (I prefer almond or cashew. I used GroundUp snickerdoodle)
  • 2 tbsp maple syrup
  • 1/3 Cup milk, of choice (i used cashew) *I like to warm mine up a little
  • 1 tsp vanilla extract & pinch sea salt
  • 1 /2-1 tsp cinnamon (optional)

Yogurt Bites

  • 3/4 cup THICK greek yogurt or coconut yogurt *CocoJune & Culina are the best coconut yogurt brands
  • 1 apple of choice, diced SUEPR small
  • 2 tbsp protein powder, of choice *optional
  • 2 tbsp almond or cashew butter *I used GroundUp Snickerdoodle
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract & pinch of sea salt
  • 1 tsp apple pie spice (or cinnamon & 1/4 tsp nutmeg)

Chocolate Shell

  • 1 cup chocolate chips
  • 1-2 tsp coconut oil * to help thin the chocolate

Instructions

 

Date Caramel

  • After soaking the dates in hot water for 15 minutes to soften them, drain thoroughly. Add the softened dates to your food processor along with the melted coconut oil, nut butter, maple syrup, vanilla extract, and sea salt. Begin blending, starting with just 2 tablespoons of milk. Blend for about a minute, then scrape down the sides of the bowl. Continue blending and add an additional tablespoon or two of milk as needed, until the mixture reaches a smooth, creamy caramel consistency. Be cautious not to over-thin it.
  • Once your date caramel is perfectly smooth, transfer it to an airtight container and store it in the fridge until ready to use. This can be made ahead of time!

Yogurt Clusters

  • In a large bowl, combine the thick Greek or coconut yogurt, protein powder (if using), almond or cashew butter, maple syrup, vanilla extract, sea salt, and apple pie spice. Mix thoroughly until all ingredients are well combined and smooth. Gently fold in the super-small diced apples last. Taste the mixture and adjust the sweetness or spice as desired (add a little extra maple syrup if needed).
  • Line a baking sheet with parchment paper or a silicone mat. Use a cookie scoop to portion out the yogurt mixture onto the prepared sheet, forming individual clusters. Take a small spoonful of your prepared date caramel and place a dollop in the center of each yogurt cluster. Place the entire baking sheet into the freezer for 3-4 hours, or until the clusters are completely solid and firm to the touch.
  • Once the yogurt clusters are frozen solid, prepare your chocolate shell. In a medium microwave-safe bowl, combine the chocolate chips and coconut oil. Melt using the double boiler method or by heating in 30-second increments in the microwave, stirring well after each interval, until the chocolate is smooth and fully melted. Quickly dip each frozen yogurt cluster into the melted chocolate, ensuring it’s fully coated. Allow any excess chocolate to drip off before returning the cluster to the lined baking sheet.
  • Place the baking sheet back into the freezer for another hour or two to allow the chocolate shell to fully harden. Once set, transfer the caramel apple yogurt clusters to an airtight container for storage.
