Chocolate Coating

  • 1 cup chocolate chips
  • 1/2 tbsp coconut oil , if needed to thin the chocolate.

Instructions

  • In a large bowl, combine the yogurt, peanut butter, protein powder (if using), maple syrup/honey, vanilla extract, and sea salt. Stir until fully combined. Gently fold in the chopped peanuts.
  • Use an ice cream scoop or large cookie scoop to form circular portions of the mixture onto a parchment-lined baking sheet.
  • Optional: Insert popsicle sticks into the side of each bar. Use a spoon to smooth the yogurt mixture around the stick to ensure it’s covered.
  • Place the tray in the freezer for 2-3 hours, or until the bars are COMPLETELY firm.
  • Once firm, melt the chocolate chips. Use a double boiler or microwave in 30-second increments, stirring until smooth. Add 1/2 tbsp coconut oil if needed to thin.
  • Quickly dip each frozen bar into the melted chocolate, allowing excess to drip off. Return to the baking sheet. Optional: Sprinkle with flaky sea salt. Return to the freezer for 15 minutes to harden the chocolate.
  • Store the finished Dilly Bars in an air-tight container in the freezer for up to two months.
