Embrace the autumn season with this incredibly creamy, homemade pumpkin spice coffee creamer. Crafted right in your blender with just a few wholesome ingredients, it promises a burst of authentic fall flavor. Perfectly suited for those following vegan, dairy-free, Whole30, or paleo diets, this creamer will transform your morning coffee or afternoon latte into a comforting, guilt-free indulgence.

As the leaves begin to turn and the air gets crisp, our social media feeds invariably fill with delightful fall recipes. While I adore all things pumpkin and autumn-themed, I confess to savoring the last lingering days of summer as long as possible. Yet, I must admit, the temptation of a pumpkin spice or fall-flavored coffee often wins me over a time or two even before September officially rolls around. There’s just something inherently cozy about that first sip of fall!
However, finding high-quality, dairy-free, store-bought creamers that aren’t loaded with a laundry list of unnecessary ingredients can be a real challenge. Many commercial options are packed full of artificial flavors, excessive sugars, additives, and preservatives that detract from the natural goodness of your coffee. If you’ve never ventured into making your own coffee creamer at home, prepare to be amazed. It’s not only incredibly simple and surprisingly cost-effective, but it also gives you complete control to tailor the flavors and sweetness precisely to your liking. This particular pumpkin spice coffee creamer is a game-changer: it’s vegan, entirely refined sugar-free, and made with only a handful of wholesome, natural ingredients.

When properly soaked and blended, raw cashews create a luscious consistency that rivals any dairy creamer. Paired with real pumpkin puree and a generous blend of pumpkin spices, every sip delivers an authentic, comforting taste of autumn.
- Naturally Sweetened & Wholesome: Say goodbye to artificial flavors, colors, and preservatives. This recipe relies on natural sweeteners like dates and maple syrup, allowing you to enjoy your pumpkin spice coffee without the guilt or unwanted additives often found in commercial options. It aligns perfectly with a clean eating lifestyle.

Essential Equipment
You don’t need much to whip up this creamer, but these two items are key:
- High-Powered Blender: A good blender is crucial for achieving that silky-smooth, lump-free consistency.
- Airtight Storage Container: Essential for keeping your creamer fresh in the fridge throughout the week. Glass jars or bottles work perfectly.
Key Ingredients (and why they work!)
Each ingredient plays a vital role in creating the ultimate pumpkin spice coffee creamer:
- Cashews: Raw cashews are the star here, forming the unbelievably creamy and smooth base of your creamer. For an ultra-smooth, no-strain result, I highly recommend soaking your cashews in hot water for at least 20 minutes (or overnight in cold water) before blending. This softens them significantly, ensuring a velvety texture. I often buy them in bulk from Amazon for the best value.
- Filtered Water: While simple, using filtered water ensures the purest taste, allowing the pumpkin and spice flavors to truly shine.
- Pumpkin Puree: This is where the magic happens! Be absolutely sure to use plain pumpkin puree, NOT pumpkin pie filling. Pumpkin pie filling contains added sugars and spices, which we will be adding separately for better control over flavor and sweetness. Look for cans that list only “pumpkin” as the ingredient.
- Dates and/or Maple Syrup: These natural sweeteners offer flexibility. I love using a mix of both—a date or two provides a lovely, subtle caramel-like flavor and rich sweetness, while a tablespoon or two of maple syrup allows for easy adjustment to your desired sweetness level. Feel free to use one or the other based on your preference and dietary needs.
- Pantry Staples:
- Sea Salt: A tiny pinch of sea salt might seem counterintuitive for a sweet creamer, but it’s a flavor enhancer, balancing the sweetness and making the other flavors pop.
- Vanilla Extract: High-quality vanilla extract adds a warm, comforting aroma and depth that complements the pumpkin spice beautifully.
- Cinnamon & Pumpkin Spice: These are the quintessential fall flavors! Using a good quality pumpkin spice blend (which typically includes cinnamon, nutmeg, ginger, and cloves) is essential. You can adjust the quantity to make it as subtly or boldly spiced as you like.

Step-by-Step Guide to Making Pumpkin Spice Coffee Creamer
Follow these simple steps for a flawless batch every time:
- Prepare Cashews (if needed): If you don’t have a super high-powered blender, start by soaking your raw cashews. Place them in a small pot, cover with hot water, bring to a boil on medium-high heat, then turn off the heat and let them soak for 15-20 minutes. Drain thoroughly before use. This step is key for achieving that ultimate creamy consistency without any grittiness.
- Blend All Ingredients: Add all of your prepared creamer ingredients (soaked cashews, filtered water, pumpkin puree, dates/maple syrup, pumpkin spice, vanilla extract, and sea salt) into a high-powered blender. Blend on high for at least 1-2 minutes, or until the mixture is incredibly smooth and completely free of cashew chunks. You might need to pause and scrape down the sides of the blender a few times to ensure everything is fully incorporated.
- Taste and Adjust: Once blended, taste your creamer. This is your chance to customize! Want more pumpkin spice? Add another teaspoon. Prefer it sweeter? Add an extra date or a splash more maple syrup. If the creamer seems too thick for your preference, you can thin it out with a little extra filtered water, a tablespoon at a time, until you reach your desired consistency. Remember, it’s designed to be rich and thick!
- Store Properly: Pour the finished pumpkin spice coffee creamer into an airtight container (a glass jar works wonderfully) and store it in the refrigerator. It will stay fresh for up to 5 days.
- Shake Before Use: Because this creamer is all-natural and free of stabilizers and preservatives, some separation is completely normal. Simply give it a good shake before each use to re-emulsify and enjoy its creamy texture.
Frequently Asked Questions (FAQ’s)
Got questions? We’ve got answers to help you master your homemade pumpkin spice creamer.
- How long does homemade coffee creamer last? Your homemade pumpkin spice coffee creamer will last for up to 5 days when stored in an airtight container in the refrigerator. Always give it a good shake before using, as natural separation is expected. If you notice any off-smells or mold, it’s best to discard it.
- How to use pumpkin spice creamer beyond coffee: While it’s perfect for coffee and lattes (stir 2-3 tablespoons into your hot or iced brew!), its uses don’t stop there. Get creative!
- Add a tablespoon or two to your morning overnight oats or chia pudding for a delightful fall twist.
- Blend it into your post-workout smoothies for an extra creamy texture and a hint of seasonal flavor.
- Use it as a base for fall-inspired baked goods, like muffins or quick breads, replacing some of the liquid.
- Whisk it into pancake or waffle batter for a special autumnal breakfast.
- Can I make a nut-free version? Absolutely! The recipe card at the bottom of the post includes a simple nut-free variation. Instead of cashews, it utilizes a dairy-free half-and-half (like Nutpods), traditional half-and-half, or even regular dairy half-and-half for those who don’t need a dairy-free option. This ensures everyone can enjoy the festive flavor!
- What’s the difference between pumpkin puree and pumpkin pie filling? This is a crucial distinction! Pumpkin puree is simply cooked, mashed pumpkin. Pumpkin pie filling, on the other hand, is pre-sweetened and pre-spiced, often containing ingredients like sugar, cinnamon, nutmeg, and cloves. For this recipe, always use plain pumpkin puree so you can control the sweetness and spice levels yourself.
- Do I need a high-powered blender? While a high-powered blender (like a Vitamix or Blendtec) will give you the absolute smoothest, most professional-quality creamer, you can still make this with a standard blender. If using a less powerful blender, ensure you soak your cashews thoroughly (even longer than 20 minutes if needed, or overnight) to ensure they break down completely into a creamy consistency. You might also need to blend for a longer duration and scrape the sides more frequently.
- Can I double or triple the recipe? Yes! This recipe is easily scalable. Feel free to make a larger batch if you have a big family of coffee lovers or want to enjoy it for more than a week. Just ensure you have a large enough blender and storage container.

- 1/4 cup pumpkin puree
- 1/2-1 tsp pumpkin pie spice
- 3 tbsp maple syrup *more if needed

Instructions
-
I like to start by soaking my cashews in hot water for 15 minutes. If your blender isn’t super high-powered, I highly recommend doing this! Simply add the cashews to a small pot and cover them with water. Place on the stove on medium-high and let the water come to a boil. Turn off the heat and let them soak for 15-20 minutes. Then drain the water, then use the cashews.
-
Add all of the ingredients to a high-powered blender and blend for a few minutes until super smooth. You may need to scrape down the sides and blend again to make sure there aren’t any chunks of cashews!
-
Taste the creamer & adjust as you’d like (more pumpkin spice, more sweetener, etc.). If the creamer is too thick for your liking, simply add a little extra water, but this is meant to be thick!
-
Stir 2-3 tbsp into each coffee. Can be used in iced or hot beverages! Sometimes i’ll even add a few tbsp to my chia pudding or fall smoothies!

Store in an air-tight container in the fridge for up to 5 days! Separation is natural, just shake before use!
