  • Add the full-fat coconut milk, maple syrup, coconut sugar, vanilla extract, and sea salt to a small, deep pan over medium heat. Bring the mixture to a boil, stirring frequently to combine. Lower the heat to a simmer and continue cooking, stirring often, until the mixture has reduced by half. This critical step prevents burning and can take around 30 minutes, sometimes longer, so be patient.
  • When the caramel is done, it should have a thick consistency resembling sweetened condensed milk or a rich caramel sauce and will have deepened in color. Remove from heat immediately. You should yield a little over a cup of this delicious homemade caramel.
