  • In the bowl of a stand mixer (or a large bowl if using a hand mixer), add 1/4 cup of water. Evenly sprinkle 1 tablespoon of grass-fed gelatin over the water. Let this mixture sit undisturbed for 5 minutes to allow the gelatin to bloom and thicken.
  • In a small saucepan, combine the remaining 1/4 cup of water with 1/2 cup of maple syrup. Place the pot over medium-high heat and bring the mixture to a gentle simmer, heating until it reaches 240°F (if you have a candy thermometer, use it for accuracy).
  • Attach the whisk attachment to your stand mixer (or prepare your hand mixer). Begin mixing the bloomed gelatin on a slow speed. Slowly and carefully pour the warm maple syrup mixture into the gelatin as you gradually increase the mixer speed to high. Whip the mixture continuously for 3-5 minutes.
