  • 3 tablespoons salt
  • 1 medium lemon halved and squeezed
  • 2 medium fresh artichokes

For the Cajun Dipping Sauce

  • ¼ cup Greek yogurt
  • ¼ cup mayonnaise
  • 1 teaspoon Cajun seasoning
  • teaspoon smoked paprika plus more to taste
  • salt to taste, optional

For the Garlic Dill Dipping Sauce

  • ¼ cup Greek yogurt
  • ¼ cup mayonnaise
  • 1-2 cloves garlic minced
  • ½ tablespoon minced fresh dill
  • salt to taste, optional

For the Creamy Butter Sauce

  • ¼ cup butter at room temperature
  • ¼ cup mayonnaise

  • Water to fill pot
  • Cutting board
  • Sharp knife
  • Kitchen shears
  • 3 small bowls with lids, or plastic wrap to cover
  • 3 mixing spoons

Instructions 

  • Begin by filling a large pot approximately two-thirds full with water. Add 3 tablespoons of salt and squeeze as much juice as possible from 1 medium lemon into the pot. Once squeezed, place the lemon halves directly into the water. Stir all ingredients to ensure they are well combined. Place the pot over medium-high heat and bring the water to a rolling boil.
  • While the water is heating, prepare your 2 medium fresh artichokes. Place each artichoke on a cutting board, lying on its side. Using a sharp knife, carefully cut off the stems of the artichokes, slicing them flush with the base to create a flat bottom.

  • Firmly holding the base of each artichoke, use your sharp knife to slice away the top two rows of petals from the other end of the artichoke (about an inch off the top). This removes the tough, inedible tips.

  • Next, use kitchen shears to snip off the sharp, thorny points from the remaining artichoke petals. This makes them much more pleasant to handle and eat. Note: This step can also be done before slicing the stems and tops if you find it makes the artichokes easier to manage.

  • Once trimmed, carefully place the artichokes into the pot of boiling water. To ensure they remain fully submerged and cook evenly, place a heat-proof lid (one that is slightly smaller than your pot) upside-down directly on top of the artichokes to weigh them down.

  • Boil the artichokes for 30 to 40 minutes, or until the outer petals can be easily pierced by the tines of a fork with no resistance. A gentle tug on an outer leaf should also show it coming away easily.
  • While the artichokes are boiling, prepare the Cajun dipping sauce. Add ¼ cup Greek yogurt, ¼ cup mayonnaise, 1 teaspoon Cajun seasoning, ⅛ teaspoon smoked paprika, and salt (optional, to taste) to one small bowl. Mix thoroughly until all ingredients are fully combined and smooth. Cover the bowl with a lid or plastic wrap and refrigerate until you are ready to serve.

  • For the Garlic Dill Dipping Sauce, add ¼ cup Greek yogurt, ¼ cup mayonnaise, 1-2 cloves minced garlic, ½ tablespoon minced fresh dill, and salt (optional, to taste) to a second small bowl. Mix well until all components are thoroughly combined. Cover the bowl with a lid or plastic wrap and refrigerate until serving.

  • To create the Creamy Butter Sauce, combine ¼ cup room temperature butter and ¼ cup mayonnaise in a third small bowl.
