  • 4 slices Swiss cheese or 4 ounces shredded Swiss cheese (first layer)
  • 8 slices ham thinly cut
  • 4 slices Swiss cheese or 4 ounces shredded Swiss cheese (second layer)
  • 2 large eggs
  • 1 ½ cups panko breadcrumbs or seasoned breadcrumbs

For the Creamy Dijon Sauce

  • 1 10.5-ounce can condensed cream of chicken soup or 1 ¼ cup homemade cream of chicken soup
  • ½ cup full-fat sour cream at room temperature
  • 1 tablespoon lemon juice
  • 1 tablespoon dijon mustard

Instructions 

To Prepare the Chicken

  • Cover a large cutting board (or flat work surface) with a sheet of plastic wrap. Place 4 medium boneless, skinless chicken breasts on top of the plastic wrap, then cover them with a second sheet of plastic wrap.
  • Use a rolling pin or meat mallet to pound the chicken breasts until they are approximately ½-inch thick. Ensure each chicken breast is evenly thin across all areas, being careful not to tear the chicken.
  • Season chicken breasts on all sides with salt and freshly cracked black pepper to taste.
  • Spread ½ tablespoon of dijon mustard evenly across the top of each chicken breast (2 tablespoons dijon mustard total).
  • Place 1 slice of Swiss cheese per chicken breast on top of the dijon mustard (first layer – 4 slices Swiss cheese total).
  • Lay 2 slices of ham on top of each slice of Swiss cheese (8 slices ham total).
  • Cover the ham with 1 slice of Swiss cheese per chicken breast (second layer – 4 slices Swiss cheese total).
  • Carefully fold or roll each chicken breast, fully enveloping the ham and cheese in the chicken. Secure the chicken breasts with toothpicks to keep them folded or rolled. Set aside.
  • While the air fryer preheats, crack 2 large eggs into one shallow bowl. Whisk the eggs vigorously until the mixture is pale in color with no streaks remaining. Set aside.
  • Fill the remaining shallow bowl with 1 ½ cups panko breadcrumbs. Set aside.
  • Preheat air fryer to 350° Fahrenheit.
  • Dip one chicken breast in the egg mixture, ensuring all sides of the chicken breast are completely coated. Allow excess egg to drip off the chicken and back into the bowl.
  • Place the chicken breast in the bowl of breadcrumbs. Cover the chicken in breadcrumbs on all sides, gently pressing the breadcrumbs into the chicken to ensure full coverage.

  • After 5 minutes, place the chicken breasts in the air fryer basket, arranging them in a single layer without touching or overlapping to ensure even cooking and crispiness.
  • Air fry chicken breasts for 10 minutes.
  • After 10 minutes, carefully remove the basket from the air fryer. Flip the chicken breasts over, then return the basket to the air fryer.
  • Air fry chicken breasts for an additional 5 minutes. After this time, check the internal temperature of the chicken breasts with a meat thermometer.
  • Continue cooking the chicken, checking the internal temperature every 60 seconds. Remove the chicken breasts from the air fryer when the internal temperature reaches 160° Fahrenheit and set them aside to rest for 5 minutes.
