Ingredients

Pizza dough

  • 2 cups almond flour
  • 1/4 cup tapioca flour
  • 6 tbsp coconut sugar
  • 6 tbsp melted coconut oil or ghee
  • 1 egg (room temp)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract & pinch of sea salt

Streusel filling

  • 1/2 cup organic quick or old-fashioned rolled oats *See notes
  • 1 tbsp cinnamon
  • 5 tbsp melted coconut oil
  • 1/3 cup coconut sugar

Frosting

  • 1 cup cashews *soaked in hot water for 1 hour prior
  • 3-4 tbsp canned coconut milk or cream *use the solid part from the top of the can
  • 3 tbsp maple syrup
  • 1/2 tbsp lemon juice
  • 1 tsp vanilla extract
  • pinch of sea salt

Instructions

  1. Preheat oven to 350F (175°C).
  2. Mix together the dough ingredients in a bowl until a cohesive dough forms. Place the dough onto a piece of parchment paper and carefully form it into a circular pizza crust shape. Gently build up the edges or “crust” around the pizza, creating a slight rim (similar to a stuffed crust or deep-dish pizza). This will help contain the delicious filling.
  3. In a separate bowl, mix together all the streusel filling ingredients until smooth and well combined. Spoon this filling into the middle of the prepared pizza crust, spreading it out evenly to cover the base.
  4. Bake in the preheated oven for 15-18 minutes, or until the edges of the crust are beautifully golden brown. Once baked, remove the pizza from the oven and let it cool slightly.
  5. While the pizza cools, prepare the frosting. Combine all frosting ingredients in a blender and blend until completely smooth and creamy. The consistency should be thick, resembling a cream cheese frosting. Place it in the fridge to firm up a bit while the pizza finishes cooling.

Serving

  1. You have two options for serving: either drizzle the cooled pizza with the prepared frosting immediately, or allow the pizza to cool completely and then warm individual slices when ready to eat, adding the frosting just before serving for a warm and fresh experience. Enjoy!
