Essential Ingredients for Your Creamy Marry Me Beans
Crafting these Marry Me Tuscan Beans requires a selection of fresh and pantry-friendly ingredients that come together to create that signature “Marry Me” flavor:
- Beans: The star of our dish! White beans work best here, offering a creamy texture that perfectly absorbs the sauce. Options like Great Northern beans, butter beans, cannellini beans, or navy beans are all excellent choices. Avoid chickpeas for this recipe, as their texture is a bit too firm for the desired creaminess. Beans are not only a fantastic source of plant-based protein but also brimming with fiber, contributing to satiety and digestive health.
- Vegan Butter, Grass-Fed Butter, or Ghee: Whichever you prefer, this fat adds a foundational layer of rich flavor to the dish. Don’t skip it, as it’s crucial for the depth of taste!
- Oil-Packed Sun-Dried Tomatoes: A non-negotiable for any authentic Tuscan-inspired dish! Oil-packed sun-dried tomatoes are far superior to dry-packed ones for this recipe. They retain their moisture and plumpness, infusing the sauce with their intense, sweet-tart flavor. Look for high-quality sun-dried tomatoes, perhaps even from a local specialty store or Trader Joe’s, for the best results.
- Spinach or Arugula: These leafy greens not only boost the nutritional content but also add a vibrant pop of color and a touch of freshness. Arugula, in particular, offers a peppery kick and is a great cruciferous vegetable with anti-inflammatory properties.
- Spices: A carefully selected blend creates the soul of the “Marry Me” sauce. You’ll need:
- Garlic Cloves: Minced fresh garlic is essential for aromatic depth.
- Oregano: Provides that classic Mediterranean herb flavor.
- Sea Salt & Pepper: Basic seasonings to enhance all the other flavors.
- Nutritional Yeast (Optional, but highly recommended!): Adds a cheesy, umami depth, especially crucial for a vegan and dairy-free version. It’s a secret weapon for flavor.
- Red Pepper Flakes: For a subtle kick that balances the richness. Adjust to your heat preference.
- Smoked Paprika: Though not in the original list, it is in the recipe card – it adds a lovely smoky depth and color that complements the sun-dried tomatoes.
- Full-Fat Canned Coconut Milk/Cream: This is what gives our Tuscan beans their incredible creaminess, keeping the dish dairy-free. Ensure it’s full-fat for the best texture. If you don’t have a coconut intolerance and are not strictly vegan/dairy-free, you can substitute it with regular heavy cream.
- Broth: Use your favorite vegetable broth for a fully vegan option. For added gut-health benefits and protein (if not strictly vegan), bone broth can also be used.
- Arrowroot Flour/Starch: This is key for achieving the perfect creamy consistency without traditional thickeners. It helps the sauce bind and become velvety smooth.
- Fresh Basil & Vegan or Regular Parmesan Cheese: These are the perfect finishing touches. Fresh basil adds an aromatic, peppery sweetness, while a sprinkle of parmesan (vegan like VioLife or traditional dairy) provides a salty, savory garnish.

How to Make These Delightful Marry Me Tuscan Beans
Creating this flavorful dish is incredibly simple, requiring minimal effort and time. Follow these straightforward steps to enjoy your creamy Tuscan beans in under 20 minutes:
Equipment You’ll Need
A good quality pan makes all the difference for this one-pot meal:
- Large Pan: I highly recommend a reliable cast iron pan or a spacious saucepan. My Our Place Cast Iron Always Pan was absolutely incredible for this recipe – not only did it perform wonderfully, but its aesthetic appeal with those cute colors is a bonus!
Step-by-Step Cooking Instructions
Follow these easy steps to bring your Marry Me Tuscan Beans to life:
- Build the Flavor Base: Begin by heating your chosen pan over medium heat. Add the vegan butter (or ghee/butter), minced garlic, and all your spices (oregano, sea salt, pepper, nutritional yeast, red pepper flakes, smoked paprika). Sauté this aromatic mixture for just a minute or two until the garlic is fragrant, being careful not to burn it. This initial step is crucial for developing a deep, complex flavor.
- Combine the Hearty Fillings: Into the pan, add the drained and rinsed white beans, chopped oil-packed sun-dried tomatoes, and your chosen greens (spinach or arugula). Give everything a good stir to ensure it’s well combined. Let this mixture gently simmer for a few minutes. While it simmers, prepare a slurry by whisking together a splash of broth with the arrowroot starch in a small bowl until completely smooth, with no lumps. Pour this slurry into the pan, along with the full-fat canned coconut milk/cream. Continue to cook for a few more minutes, stirring occasionally, until the sauce thickens slightly and becomes beautifully creamy. If the sauce becomes too thick for your preference, simply thin it out with a little extra broth or milk.
- Serve and Garnish: Once the beans are heated through, the sauce is creamy, and the flavors have melded (don’t forget to taste and adjust seasonings if needed!), your Marry Me Tuscan Beans are ready to be enjoyed! Transfer them to bowls and finish with a generous sprinkle of fresh chopped basil and vegan or dairy parmesan cheese. For an extra touch of decadence, a final splash of cream can be added before serving.
Perfect Pairings: What to Serve with Marry Me Tuscan Beans
These flavorful beans are wonderful on their own, but they also pair beautifully with a variety of sides to create a more complete and satisfying meal:
- Toasted Artisan Bread: A slice of paleo sandwich bread or crusty sourdough, lightly toasted, is perfect for soaking up every last drop of that creamy, delicious sauce.
- Extra Protein Power: If you’re looking to boost the protein content, these beans make an excellent side to your protein of choice. Consider serving them alongside grilled chicken breast, baked salmon, or even crispy air-fried tofu.
- Fresh Side Salad: A simple, crisp green salad with a light vinaigrette provides a refreshing contrast to the richness of the beans.
- Over Grains or Veggies: Serve the Marry Me Tuscan Beans over a bed of fluffy rice for a comforting meal, or opt for a lighter option by serving them over spaghetti squash or cauliflower rice.

Creative Recipe Variations
One of the best things about this Marry Me Tuscan Beans recipe is how adaptable it is. Feel free to get creative and customize it to your taste or what you have on hand:
- Add Crispy Tofu: For an extra layer of plant-based protein and texture, prepare some crispy air-fried tofu cubes and stir them into the beans at the end, or serve them on top.
- Salmon Boost: If you’re not strictly vegan, a perfectly cooked salmon filet, pan-seared or baked, makes a fantastic addition, adding healthy omega-3 fatty acids and a rich flavor.
- Chicken Options: Similarly, cooked chicken breast, shredded rotisserie chicken, or even tender chicken thighs can be added for a more traditional “Marry Me” protein experience. Serve them mixed in or alongside the beans.
- More Veggies: Enhance the nutritional profile and introduce more textures by incorporating other roasted vegetables. Zucchini, summer squash, bell peppers, or even cauliflower rice can be roasted separately and stirred into the beans for a more complex dish.
- Spice It Up: For those who love a bit more heat, increase the amount of red pepper flakes or add a pinch of cayenne pepper.
- Herb Swaps: While basil is traditional, try experimenting with other fresh herbs like parsley or even a hint of rosemary for a different aromatic twist.
Frequently Asked Questions (FAQ’s)
Here are some common questions about making and enjoying your Marry Me Tuscan Beans:
- Can I use fresh tomatoes instead of sun-dried? While the recipe video might show me using some fresh cherry tomatoes (due to a last-minute shortage of sun-dried!), I highly recommend sticking with sun-dried tomatoes. Fresh tomatoes don’t offer the same concentrated, sweet-tangy flavor or dense texture that is crucial for the authentic Tuscan taste and rich sauce of this dish. The sun-dried variety truly makes a significant difference in the final outcome.
- What if my beans end up too thick? The sauce can thicken quite a bit as it cooks or cools. If your Marry Me Tuscan Beans become thicker than you prefer, don’t worry! Simply add a splash more coconut milk (or regular cream/broth) a little at a time, stirring it in over low heat until you reach your desired creamy consistency.
- How do I store leftover Marry Me Beans? Leftovers are fantastic! Store any remaining Marry Me Tuscan Beans in an airtight container in the refrigerator for up to 5 days.
- How do I reheat leftovers? To reheat, simply warm them gently on the stovetop or in the microwave. If they’ve thickened overnight, add a splash of extra cream or broth while reheating to restore their luscious texture.
- Can you freeze leftovers? Unfortunately, I do not recommend freezing this dish. The cream and beans can develop an icy, grainy texture when frozen and thawed, and they don’t reheat well, losing much of their desirable creamy consistency.
- Can I use a different type of plant-based milk? Full-fat canned coconut milk (or cream) is recommended for its richness and ability to create a thick, creamy sauce. Other plant-based milks like almond or oat milk might be too thin and won’t yield the same luxurious texture. If you must substitute, look for a full-fat, unsweetened option and be prepared that the consistency may differ.
- What if I don’t have arrowroot starch? You can substitute cornstarch (mixed with cold liquid before adding) or a gluten-free all-purpose flour blend in a similar quantity. The texture might vary slightly, but it will still help to thicken the sauce.
