Then, add the remaining sauce ingredients: honey, coconut aminos, sesame oil, rice vinegar, red pepper flakes (if using), fresh grated ginger, and grated or finely diced garlic cloves. Whisk everything together thoroughly until well combined. Pour this delicious sauce evenly over the chicken in the slow cooker. Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is incredibly tender and can be easily pulled apart with a fork. (From my experience, cooking on high heat often yields a slightly more concentrated flavor, but both methods are effective!)
  • Once cooked, remove the chicken from the slow cooker and use two forks to shred it into small, manageable pieces. Return the shredded chicken to the slow cooker and stir everything well, allowing the chicken to soak up all that incredible saucy goodness. For an even thicker, more flavorful sauce, you can continue to cook it on high for another 20-30 minutes, stirring occasionally, until the sauce reduces and clings beautifully to the chicken.
