Instructions 

To Roast the Poblano

  • To begin, position your oven rack approximately 10 inches below the heating element, ensuring ample space for broiling. Carefully preheat your broiler to its HIGH setting. Once the broiler is fully preheated, gently place the 1 large poblano pepper (about 4 ounces) directly onto the oven rack. This direct heat will quickly char the skin, imparting a smoky flavor.
  • Broil the poblano pepper, watching it closely, until its skin is completely blackened and blistered, but be careful not to let it turn white or ash-like. This usually takes only a few minutes.   • Wearing gloves or using paper towels (as the skin might still be slightly hot and messy), carefully peel away the charred pepper skin and discard it. Next, remove the stem and slice the pepper open to scrape out and discard all the seeds and membranes. Finely chop the remaining tender, smoky pepper flesh, then transfer the chopped pepper to a large mixing bowl, ready for your salsa.
