Champagne Jello Shots
These champagne Jello shots are a mixture of champagne, vodka, lemon juice and sugar, served in shot cups with festive sprinkles on top. The perfect offering for New Year's Eve!

1¾ cups champagne divided use 1 tablespoon lemon juice ⅓ cup granulated sugar 2 packets unflavored gelatin equates to 5 teaspoons ¼ vodka chilled gold and silver sprinkles or edible glitter
Place 1 cup of champagne along with the lemon juice and sugar in a medium pan.
Sprinkle the gelatin packets over the champagne mixture. Stir everything together, then let the mixture sit for 3 minutes so the gelatin can bloom.
Turn the stove to medium low heat, and cook for 2-3 minutes until the gelatin has melted.
Once everything has melted together, take pan off the heat. Let it sit for 5 minutes, then stir in the rest of the champagne and the vodka.
Pour the gelatin mixture into 2-ounce shot glasses or cups.
Let the shots chill in the fridge for at least 2 hours or until firm. Add sprinkles, then serve.
Wait to add the sprinkles or glitter until right before you serve the shots, otherwise they could melt into the gelatin.
Place all the shots on a sheet pan, this makes it easier to transfer them to the fridge.
I use 2 ounce shot cups for this recipe.
