Raspberry Lemonade

This raspberry lemonade is a refreshing blend of raspberries, lemon juice, sugar and water. The perfect beverage for a hot day!

Ingredients

  • 2 cups fresh raspberries
  • 7 cups water divided use
  • 1⅓ cups granulated sugar
  • 2 cups fresh squeezed lemon juice
  • raspberries, lemons and mint sprigs for garnish optional

Instructions

  • Combine the sugar with 2 cups of water.
  • Microwave for 2 minutes or heat on the stove until very hot. Stir until sugar is dissolved to make a syrup.
  • Place the raspberries in a blender with 1 cup of water. Blend until smooth.
  • Put the mixture through a strainer.
  • Combine the raspberry puree, sugar syrup mixture, lemon juice and remaining 4 cups of water in a pitcher.
  • Stir thoroughly then chill until ready to serve.
  • Just before serving, stir in sliced raspberries, lemon and mint sprigs if desired.

Notes

  1. Fresh raspberries work best in this recipe. You can use frozen raspberries if that's what you have on hand, but you may need to add more sugar.
  2. Raspberry lemonade will stay fresh in the refrigerator for up to 4 days.
